How To Make A Coffee Cake Without Eggs: Step-by-step Guide

Ingredients Notes & Substitutions

For the Cake

• Skip the cake flour, bread flour, and wheat flour for this recipe; regular all-purpose flour is preferred.
• Make sure the baking soda and powder are not past their expiration dates or are too old.
• Sea salt or kosher salt is what I prefer. I advise cutting the salt in half if all you have is table salt.
• Butter: I prefer unsalted butter, but you can use salted if that’s all you have on hand. Remove the salt specified in the recipe in this instance.
• Make use of the block-shaped full-fat cream cheese.
• Granulated sugar and light brown sugar are both necessary.
• Yogurt: Yogurt can be used in place of sour cream in recipes. Use the full-fat varieties, in my opinion.
• Vanilla extract: Real vanilla extract is what I advise using.
• Buttermilk: Select pure vanilla over imitation for the best flavor. Try making your own vanilla extract for even better results!

For the Streusel Topping

Brown sugar, all-purpose flour, cinnamon, salt, and unsalted butter (be sure it is cold), as well as light or dark brown sugar, are required to make the streusel.

For the Glaze

If you choose to add the glaze, you will need milk and powdered sugar.

Step-by-step Guide

Preheat the Oven & Prepare the Pan

Set a 9 or 10-inch springform pan’s bottom with parchment paper, and lightly grease and flour it. Preheat the oven to 350°F. I used a 9-inch (10-cup) springform pan.

Make the Streusel

Salt, flour, cinnamon, and brown sugar are all combined. When small to medium clumps form, add the butter with a pastry cutter or rub it in with your fingers.

Make the Egg-Free Coffee Cake Batter

• Combine the dry ingredients: Salt, baking soda, baking powder, and flour should all be combined in a sizable mixing bowl. Set aside.
• Cream the butter: Cream the butter and cream cheese in a big bowl using an electric mixer. Add sugars and mix until fluffy and light after that. Yogurt and vanilla should be mixed thoroughly after being added. Use a rubber spatula to occasionally scrape the sides and bottom of the mixing bowl.
• Combine everything: Till all of the flour mixture and buttermilk have been combined, gradually add the flour mixture to the butter mixture while alternating with the buttermilk. There is no need to overmix the batter; it will be thick.

Assemble

In the prepared pan, spread half of the batter. Next, evenly distribute half of the streusel topping over the batter layer. Afterward, pour the remaining batter on top of the streusel layer and spread it out evenly with a spatula. Last but not least, evenly distribute the remaining streusel.

Bake

A toothpick inserted in the center should come out clean after baking for 40 to 50 minutes. After 10 minutes of cooling, take off the sides of the springform pan and let the cake cool completely before cutting.

Make the Glaze (Optional)

Make the glaze as desired by combining milk and powdered sugar in a whisk. drizzle over the cooled coffee cake.

Recipe Tips

Ensure that the cream cheese you’re using is block-based rather than spreadable from a tub. These are different from one another and won’t produce the same outcomes for you.

Because it helps the streusel become crispy, your butter must be cold when you make it. Before cubing, you can freeze the butter if necessary.

The ingredients must be accurately measured. To prevent using excessive amounts of flour, I strongly advise using a kitchen scale. The result won’t be a dense coffee cake thanks to this.

A batter shouldn’t be overmixed. Contrarily, only stir to combine the ingredients in the batter in an even distribution.

If you don’t want the baking soda to lose its effectiveness, bake the cake(s) as soon as the batter is ready.

Baking times must always be regarded with caution because every oven is unique. Keep an eye on your oven’s thermostat because it can be drastically off, which will affect how long things bake. When a toothpick inserted in the center of the cake(s) comes out clean, the cake(s) are done.

How to Store Coffee Cake?

You can keep the coffee cake at room temperature in a sealed container if you intend to eat it within three days. To keep it moist and fluffy, lay a piece of paper towel on top of it. Here are two methods for keeping them for a longer period of time.

Refrigerator: Cake slices can be kept in the fridge for up to two weeks if they are placed in a sealable container.
Freezer: For up to 6 months, place in the freezer in a ziplock bag.

Does Coffee Cake Contain Coffee?

The coffee cake doesn’t actually contain any coffee, despite what many people think. As a cake that is typically served with coffee, its name derives from this fact.
